Last night, our Relief Society Board Meeting was a big success! Toni shared a President's Message from her heart, mentioning that the Relief Society does so much in the lives of so many. Toni mentioned that in this first year of their presidency, we've had seven funerals in our ward, more meals that could be counted taken in, service rendered in unmeasurable ways. We truly do live in an amazing ward! Toni also told of sisters in other countries making quilts, raising guinea pigs and all sorts of other "projects", making these sisters from across the world, very much like us here at home in Smithfield. What an amazing organization and blessing the Relief Society is!
After her message, the sisters broke up into their own departments for a bit then gathered in the cultural hall for refreshments. Many asked for the recipe to the stuffed strawberries. I've put that recipe on my cooking blog for easier access but will also include it here.
Stuffed Strawberries
2 cups powdered sugar
8 oz. cream cheese, softened
1 tsp. vanilla
8 oz. cream cheese, softened
1 tsp. vanilla
2 quarts fresh strawberries
Mix the frosting until fluffy. Do not removed the caps from the berries. Cut strawberries in fourths from stem almost to the cap. I use my Pampered Chef Decorating Press to stuff the strawberries with the frosting. If you don't have a press, you could put the frosting in a heavy zip-lock bag and cut one tip off the corner of the bag. Open the strawberry a bit and fill with frosting. The close the strawberry back enough that the frosting oozes out the sides a tiny bit. Chill until served. Note: You can make these about four hours in advance but make sure the place the filled strawberries on a few layers of paper towels to store because the sugar in the frosting will cause the strawberries to become a bit juicy.
